Ingredients
1 cup millet flakes
1½ cups full-fat coconut milk
1½ cups filtered water
2 tablespoons fresh turmeric paste (or 2 teaspoons turmeric powder)
¼ teaspoon freshly ground black pepper
1 teaspoon fresh ginger, grated
½ teaspoon ground cinnamon
2 tablespoons coconut oil
2 tablespoons raw honey (optional)
Pinch of sea salt
1 tablespoon hemp seeds for serving
Method
1In a medium saucepan, combine coconut milk and water over medium heat, warming to just below simmering (180°F/82°C).
2Whisk in turmeric paste, black pepper, ginger, and cinnamon until fully dissolved. The black pepper is crucial for curcumin absorption.
3Add millet flakes and sea salt, stirring continuously. Reduce heat to low and simmer for 12-15 minutes until creamy, stirring frequently to prevent sticking.
4Remove from heat and stir in coconut oil. Allow to cool for 2-3 minutes before adding honey if using, as excessive heat destroys beneficial enzymes.
