Anti-Inflammatory Turmeric Golden Milk Porridge for MCAS Management

Ingredients
1 cup hulled millet, rinsed
2 cups filtered water
1 cup full-fat coconut milk (canned, no additives)
2 tablespoons fresh turmeric root, finely grated
1/4 teaspoon freshly ground black pepper
1/2 teaspoon fresh ginger, minced
1 tablespoon coconut oil
2 tablespoons maple syrup (optional)
1/4 teaspoon sea salt
1 tablespoon hemp seeds for serving
Method
1Toast millet in a dry saucepan over medium heat for 2-3 minutes until fragrant and lightly golden
2Add water and bring to a boil, then reduce heat to low, cover and simmer for 15 minutes until tender
3Stir in coconut milk, fresh turmeric, black pepper, ginger, coconut oil and salt
4Cook on low heat for 3-4 minutes, stirring frequently - keep temperature below 70°C to preserve curcumin activity
5Remove from heat and stir in maple syrup if using
6Serve immediately topped with hemp seeds - do not store as leftovers reduce therapeutic compounds
