Ingredients
◆2 cups fresh broccoli sprouts
◆1 cup fresh pea sprouts
◆2 cups broccoli florets, chopped small
◆1 cup cauliflower florets, chopped small
◆1 medium white onion, diced
◆2 cloves fresh garlic, minced
◆3 tablespoons olive oil
◆1 teaspoon ground turmeric
◆1/4 teaspoon black pepper
◆1/2 teaspoon sea salt
◆2 tablespoons fresh parsley, chopped
◆1 tablespoon fresh chives, chopped
◆2 tablespoons macadamia nuts, roughly chopped
Method
1Heat 2 tablespoons olive oil in a large skillet over medium heat.
2Add diced onion and cook for 3-4 minutes until softened and translucent.
3Add minced garlic, turmeric, and black pepper. Cook for 30 seconds until fragrant.
4Add chopped broccoli and cauliflower florets. Cook for 8-10 minutes, stirring occasionally, until tender but still crisp.
5Season with sea salt and remove from heat. Let cool for 2-3 minutes.
6In serving bowls, arrange the cooked vegetables as a base.
7Top with fresh broccoli sprouts and pea sprouts.
8Drizzle with remaining olive oil and sprinkle with fresh parsley and chives.
9Garnish with chopped macadamia nuts and serve immediately while vegetables are warm and sprouts are fresh.
