DAO Boosting
MCAS-Safe Pea & Lentil Sprout Bowl
Freshly sprouted peas and lentils are among the richest dietary sources of Diamine Oxidase (DAO), the enzyme that breaks down histamine in the gut. This bowl is your first line of defense against histamine overload.

Ingredients
◆1 cup fresh pea sprouts (2–3 days old)
◆½ cup lentil sprouts (green or brown)
◆½ cup cooked, cooled white rice
◆1 tbsp cold-pressed hemp seed oil
◆1 tsp fresh ginger, microplaned
◆Pinch Himalayan pink salt
◆Fresh cilantro (if tolerated)
Method
1Rinse sprouts thoroughly in cold water and pat dry.
2Arrange sprouts over cooled rice — heat degrades DAO enzyme activity.
3Drizzle hemp seed oil (rich in anti-inflammatory omega-3/6 ratio).
4Add microplaned ginger — a natural mast cell stabilizer.
5Season with pink salt and serve immediately.
Clinical Note
Better Kitchen is a functional nutrition companion, not a replacement for medical care. MCAS and HAT are highly individual — always introduce new foods slowly and track reactions with your allergist or immunologist.
